This Thai Curry Fried Rice takes the delicious flavours from Thailand in our Good Lunch Entree, and adds a jasmine rice, lime zest and peanuts for an explosion of flavor. This easy lunch or dinner is vegan and gluten-free, but can be easily topped with your meat of choice for added protein.

Wholly Veggie Thai Curry Entrée | 1 box |
Jasmine Rice | 2 cups |
Coconut Milk | 1 can |
Crushed Peanuts | 1/3 cup |
Chopped Green Onions | 1/3 cup |
Lime juice (from fresh lime) | 2 tbsp |

- Prep jasmine rice as per package instructions
- Heat The Good Lunch Thai Curry Entrée in oven or microwave, as per package instructions
- One cooked, add The Good Lunch Thai Curry Entrée into small skillet and add coconut milk
- Mix together until warm
- Plate rice and top with Thai Curry Entrée and Coconut sauce
- Top with crushed peanuts and copped green onion
- Squeeze fresh lime on top to finish
- Enjoy!
