Ingredients
1 Box | Sweet Potato Popcorn |
1 Cup | Prepared Quinoa or Rice |
4 tbsp | Prepared Hummus |
Handful | Baby Spinach |
1 tsp | Picked Red Onion |
1 tbsp | Feta Cheese |
1 tbsp | Diced Tomatoes |
1 tbsp | Diced Cucumber |
1 Whole | Sauce Package (from box) |
2 tbsp | Olive Oil |
1 tsp | Lemon juice |

- Prepare Wholly Veggie Sweet Potato Popcorn according to package instructions
- Set sauce pack aside
- Place prepared quinoa or rice on bottom of bowl
- Spoon a generous amount of hummus in the center of the bowl
- Top in small mounds the following around the outer edge:
- baby spinach
- pickled red onions
- feta cheese
- diced tomatoes
- diced cucumber
- Wholly Veggie Sweet Potato Popcorn
- Mix sauce pack with 2 tbsp olive oil and 1 tsp lemon juice and drizzle on top
