Ingredients

1 BoxSweet Potato Popcorn
1 CupPrepared Quinoa or Rice
4 tbspPrepared Hummus
HandfulBaby Spinach
1 tspPicked Red Onion
1 tbspFeta Cheese
1 tbspDiced Tomatoes
1 tbspDiced Cucumber
1 WholeSauce Package (from box)
2 tbspOlive Oil
1 tspLemon juice

Directions

  • Prepare Wholly Veggie Sweet Potato Popcorn according to package instructions
  • Set sauce pack aside 
  • Place prepared quinoa or rice on bottom of bowl
  • Spoon a generous amount of hummus in the center of the bowl
  • Top in small mounds the following around the outer edge:
    • baby spinach
    • pickled red onions
    • feta cheese
    • diced tomatoes
    • diced cucumber
    • Wholly Veggie Sweet Potato Popcorn
  • Mix sauce pack with 2 tbsp olive oil and 1 tsp lemon juice and drizzle on top
  • Enjoy!
